Pasilla Bajio Chilli
Originally from Mexico, this dark chilli is also knowned as “chile negro” and commonly used in mole negro and a lot of Mexican Sauces. Pasilla, which means “little raisin” in Spanish, gives an idea of how refreshing and fruity this chilli can be.
The heat level of this chilli is very mild. Will do well fresh with fruits or honey, great for cooking with strong flavoured meat like lamb, duck or in a nice combination of seafood.
The chilli pods go from dark green to dark brown. When fully grown the chile negro or “Mexican negro” can measure up to 20 cm and its plant can grow up to 60 – 90 cm high. You should be able to get a lot of fresh fruit during the chilli season which lasts approximate 4 to 6 months.
