Chilli Mango Relish with Noodle Cakes
Serves 4 Print Recipe
- 100gr egg noodles, soaked, drained and chopped
- 185gr can salmon, drained and flaked
- 100gr spinach leaves, blanched
- 1/4cup flour
- 1 egg
- 2 tablespoons chopped basil
- 1 tablespoon chopped chilli
- 1 green onion
- sliced rind and juice of 1 lemon
- 1/4 cup oil
- Combine noodles, salmon, flour, spinach, egg, basil, chilli, onion and lemon in a bowl.
- Form into 8 even-sized patties using wet hands.
- Shallow fry cakes in hot oil until golden on both sides.
- Drain on chicken paper.
- Serve with Kookaburra Kackle (Mild Chilli Mango Relish)
