Chilli Vegetable Frittata

Serves 4 Print Recipe


Chilli Vegetable Frittata
  • 2 finely chopped of Mini Capsicums
  • 1/2 teaspoon of Dragon's Blood (Bloody Hot Stuff!! SHU 36,000)
  • 250gr packet of frozen spinach, thawed and drained,

    4 eggs,

    ½ cup of flour,

    ½ cup of grated tasty cheese,

    60gr crumbled feta cheese,

    ¼ cup chopped semi sun dried tomatoes,

    2 tablespoons olive oil,

    3 green onion, sliced,

    Seasoning to taste,

    ½ cup grated Parmesan cheese.



    Combine all ingredients, except Parmesan cheese, in a bowl.

    Spread mixture into a lightly oiled 23cm pie plate. Sprinkle with Parmesan cheese.

    Microwave on high (100%) power for 7 to 8 minutes or until firm.

    Serve with warm or cold wedges and with salad or vegetables of choice.



    Add some chopped ham to the ingredients if desired.



    To remove excess liquid from spinach, press it into a sieve or between two dinner plates.
