Chilli Mango Relish with Noodle Cakes

Ingredients

Chilli Mango Relish with Noodle Cakes
  • 100gr egg noodles, soaked, drained and chopped
  • 185gr can salmon, drained and flaked
  • 100gr spinach leaves, blanched
  • 1/4cup flour
  • 1 egg
  • 2 tablespoons chopped basil
  • 1 tablespoon chopped chilli
  • 1 green onion
  • sliced rind and juice of 1 lemon
  • 1/4 cup oil

Preparation

  1. Combine noodles, salmon, flour, spinach, egg, basil, chilli, onion and lemon in a bowl.
  2. Form into 8 even-sized patties using wet hands.
  3. Shallow fry cakes in hot oil until golden on both sides.
  4. Drain on chicken paper.
  5. Serve with Kookaburra Kackle (Mild Chilli Mango Relish)
