Sticky Chilli Rice with Mango

Ingredients

Sticky Chilli Rice with Mango
  • 50 mls of Funnelweb Bite (Hot Sweet Chilli Sauce)
  • 1 cup glutinous rice
  • 1 kaffir lime leaf
  • 2 cups water
  • 3/4 cup coconut cream
  • 1/4 cup grated palm sugar or brown sugar
  • 1 mango, sliced

Preparation

    Rinse rice well under cold water. Drain. Place rice, kaffir lime leaf, Funnelweb Bite and water in a saucepan over medium heat. Bring to the boil and simmer until almost all the liquid is absorbed. Remove pan from heat and pour coconut cream over rice. Cover and set aside for 5-7 minutes. Use a fork to stir through the palm sugar.

    To serve, remove the kaffir lime leaf, spoon rice into bowls and top with mango slices. Spoon over coconut cream sauce from bananas in coconut cream if desired.

    Palm sugar is available from Asian food stores and some supermarkets. Glutinous rice is starchy Asian rice available from Asian supermarkets.
