Caribbean Spiced Lamb and Pumpkin Salad

CARIBBEAN RUB

Ingredients

4 SERVINGS

  • 700g Lamb Tenderloin
  • 30g The Spice Factory Caribbean Rub
  • Approx. 3 Handfuls of Baby Rocket
  • 1/4 Pumpkin
  • 100g Feta
  • 50g Pine Nuts
  • 5 Tbsp. Greek Yogurt
  • 3/4 tsp. Salt
  • 1/2 tsp. Pepper
  • 2 Tbsp. Extra Virgin Olive Oil
  • 1 tsp. Garlic

 

Directions

STEP 1
Pre-heat oven to 200°C/180°C fan forced line one baking tray with baking paper

STEP 2
Cut lamb into 1 inch cubes and coat in The Spice Factory Caribbean Rub

STEP 3
Chop pumpkin into 1 inch cubes and coat in oil

STEP 4
Arrange pumpkin on baking tray and bake in the oven for 30 min or until tender

STEP 5
Toast pine nuts in frying pan on medium heat until golden

STEP 6
Cook lamb on BBQ hot plate or frying pan on medium heat for 5 minutes or until desired doneness

STEP 7
Mix garlic, salt, pepper, and yogurt in a pourable bowl

STEP 8
Remove pumpkin from oven and pour olive oil into yogurt mixture, stir until combined

STEP 9
Arrange rocket, pumpkin, and lamb in serving bowl

STEP 10
Pour yogurt dressing over salad and top with roasted pine nuts
